We did nothing this weekend but eat food and drink wine…starting with some delicious apps and organic wine Friday night, then brunch with $8 (eight dollars!!!) bottomless breakfast drinks, including peach prosecco and some killer red sangria, and snacks and homemade white sangria on Sunday afternoon. Also on Sunday was a trip to the local cupcake shop in the gayborhood, where we met up with our friend who was working the door with free drink tickets for a party next weekend. Also, there were naps and Swamp People on netflix. It was a lovely weekend. So, in celebration of gorgeous, lazy summer weekends, here’s my white sangria recipe so you can have your own Sunday Funday!
White Sangria
1 Bottle Pinot Grigio (we get a cheap bottle at Trader Joe’s)
3-5 oz. White Rum (Bacardi, or whatever.)
1 Nectarine
1 White Peach (yellow would be ok, too)
5-6 Strawberries (a generous handful)
Cut up the fruit into 1″ chunks and place in a glass pitcher/carafe (or a glass bowl if you don’t have either of those things). Cover the fruit with rum. Kind of mash the fruit a little bit to release some of the juices. Don’t pulverize it, just give it a little squeeze. Let sit for at least a half hour, all the way up to several hours or overnight, covered and refrigerated. About 20 minutes before serving, pour the wine into the fruit/rum concoction and stir. If you marinated the fruit in a bowl, transfer to whatever you’re serving it in first. Let marry in the fridge for 20-30 minutes, stir again and serve.
If you have fruit left over when the booze is gone, spoon some over vanilla ice cream, water ice, or sorbet for a delicious and refreshing dessert.
